It's because more often than not, the curtain behind the stage is also black and you will blend right in. If you sing any of the grungy, rock or punk genres, try mixing black jeans with a white t-shirt with some red writing on it, or whatever you can find that adds a bit of colour to the picture.
What does it feel like to be on stage?
Stepping foot onto a stage, lights out, silence, your heart is beating into your chest, and you feel your heartbeat in your head, your head in your heart, your stomach in your throat, and your mind somewhere else. This is what's it's like (at least for me) before I step out onto the stage.

In recital, it really doesn't much matter where you look, but it's preferred you sing to your audience. Part of that involves eye contact, but if that bothers you, try singing to the empty seats between concertgoers or just over their heads.
