Whip It. Evaporated milk can be used as a substitute for whipping cream. Since it has a much lower fat content, it won't whip as readily. To get around that, place the evaporated milk and the beaters you intend to use in the freezer for at least 30 minutes.

Pour 2 cups of unsweetened condensed milk into a saucepan. Add 8/10 of a cup sugar to the saucepan. Bring the mixture to a boil, stirring for 20 minutes on high heat. The milk will thicken.
